Ingredients: 5–6 medium carrots, peeled and sliced into sticks 1½ tbsp olive oil 1½ tbsp honey Salt & pepper, to taste ¼ tsp cinnamon (optional) ¼ cup dried cranberries ¼ cup chopped walnuts, toasted Fresh parsley, for garnish Directions: Preheat oven: Set to 200°C (400°F). Prepare the carrots: Toss carrot sticks with olive oil, honey, salt, pepper, and cinnamon if using. Roast: Spread on a lined baking sheet and roast for 25–30 minutes, stirring halfway, until caramelized and tender. Add toppings: Once roasted, toss carrots with cranberries and toasted walnuts. Garnish & serve: Sprinkle with fresh parsley and drizzle a little extra honey if desired. Description Skip the takeout and make authentic-tasting gyros right at home! This easy sheet pan method uses seasoned beef and lamb pressed between parchment paper, scored into strips, and baked until perfectly browned. Load it into warm flat pita bread with crisp lettuce, juicy tomatoes, red onion, crumbled feta, and homemade tzatziki sauce for a restaurant-style meal the whole family will love. No lamb? Use all beef and it's still delicious! Ingredients Gyro Meat 1 lb ground beef 1 lb ground lamb (or use 2 lbs ground beef) 1 tbsp lemon juice 1 tbsp dried oregano 2 tsp dried marjoram 1 tsp dried rosemary 1 tsp dried thyme 1 tsp ground cumin 1 tsp garlic powder 1 tsp onion powder 1½ tsp salt 1 tsp black pepper Homemade Tzatziki Sauce 1 cup plain Greek yogurt ½ cucumber, grated and squeezed dry 1 tbsp lemon juice 1 garlic clove, minced 1 tbsp fresh dill (or 1 tsp dried dill) Salt and pepper to taste For Serving Flat Greek pita bread Shredded lettuce Diced tomatoes Sliced red onion Crumbled feta cheese Tzatziki sauce Recipe Preheat oven to 425°F. In a large bowl, combine the ground beef, ground lamb, lemon juice, and all seasonings. Mix until evenly combined. Line a sheet pan with parchment paper. Place the meat mixture in the center of the pan. Lay a second sheet of parchment paper over the meat. Using your hands, a rolling pin, or a flat-bottom pan, press the meat into an even rectangle about ¼ to ⅜ inch thick. Remove the top sheet of parchment paper. Using a knife or pizza cutter, score the meat into long strips about 1 inch wide. Bake for 15–20 minutes, or until browned and cooked through. For extra color, broil for 2–3 minutes at the end. While the meat cooks, combine all tzatziki ingredients in a bowl. Stir well and refrigerate until ready to serve. Remove the meat from the oven and lift out the strips. Break them in half if needed. Warm the flat pita bread and build your gyros with meat, lettuce, tomatoes, red onion, feta cheese, and plenty of tzatziki sauce.
